Bread Machine Multi Grain Loaf

I LOVE whole grain bread! This recipe is for the bread maker and goes wonderfully with soup, especially hamburger soup. It would also go good with stews. I have had LOTS of bread makers. My first one was a gift from my husband's parents. It conked out before the one year warranty was up, so it was replaced(warranty) with another one. Not long later, that one packed it in and they gave(warranty) me another. Each time they gave me a new model as the old one was already discontinued! I have come to the conclusion that they aren't made for heavy use! Fortunately they are a dime a dozen at garage sales and on online classified sites. The one I have right now is quite small. The loaves are almost like little boxes. It's lovely to be able to come home to freshly baked bread cooking smells! 



Put the ingredients in the order they are listed into the bread pan. Why the highlighting you ask?
If you want to premake an extra loaf's ingredients, just slip all the non highlighted ingredients into a
ziploc bag and mark it Multi Grain Bread. When you are ready to make it add the liquids first, pour in your bagged ingredients and then put the yeast on top!

I would have liked to take a picture of the loaf, but we had company. My husband thinks I'm strange photographing everything as it is...don't need to scare away potential new friends!

There were a few of these small squares left and I toasted them the next day...all I can say is
mmmmmmmmm.....Don't you want to make some???

Don't Throw Out That Paper...$1 off milk inside


Today in our Event Paper the new coupon book came. Inside is the $1 off milk coupon. If you don't live close to Lakeview Market, Walmart will take the coupon and give you a $1 off your milk. I just cut it out pop it in my purse and the next time I'm in Walmart and need milk, I use it! It's nice that the expiry date isn't until April 30th. If you don't get a paper to your house there are Event(yellow) boxes in most neighborhoods.

Twice Baked Potatoes

We love twice baked potatoes! They are super easy and can be made ahead of time and frozen.

First bake your potatoes. I just put them in my toaster oven at 450 for about an hour.

Cut them in half. Careful they are hot. :)

Scoop out the potato and put it into a bowl.

I have to tell you a funny story... I first made these after we had had them at a nice dinner out.
(I have mentioned before that I didn't have a lot of kitchen smarts.) I used to cut holes in the top of the potato and then I tried
to scoop out the potato through this tiny whole!
One day a girl friend was over teaching me to make meat loaf, and I decided to make these then too. When I started to cut my oval whole in the top of the potato she asked what I was doing. When I explained I needed to get the potato out she was kind enough to not giggle. She suggested I cut them in half, and I think of her every time I make these. Thanks Marlene!

You can grate some cheese to add to your potatoes.

I also add some butter and some sour cream.
You can add cream cheese, chives, whatever you think you would like in your potatoes!


Just spoon the potato mixture back into the skins. (You can stop here and put them right into the freezer if you want and then bake later.)
Bake them again for about a half an hour or just until they are nicely browned.

Subway Style Sub Buns

We went skiing at Big White this Friday, it's one of the last $10 nights. Our traditionally ski supper is a homemade one and so I made these subway style sub buns. The original recipe is here. My sister in law and I really like this recipe! I have modified it a bit by using some whole wheat flour and adding some flax in place of some of the flour. I also put the recipe together a little differently.
1 1/2 cups warm water
2 tsp yeast
1/2 cup honey
2 large eggs
1/3 cup butter or margarine
2 cups whole wheat flour
3 cups white flour(keep 1/2 cup back)
1/2 cup flax
1/2 cup quick cooking oats
2 tsp salt


1egg white
1 tsp cold water
quick oats to sprinkle with

Start by putting 1 1/2 cups warm water in a small bowl.
Sprinkle 2 teaspoons dry yeast over the top and let sit for 10 minutes, until frothy.

Melt 1/3 cup butter(or marg) and add the 1/2 cup honey(I used creamed and it was fine)
and  2 large eggs.

Once yeast is reading pour it into your liquids and mix with the dough hook.
Add in 2 cups white flour and mix.

Add in 2 cups whole wheat flour and mix.

The last cup and a half I do the following. One cup I use half flax seed and half white flour.
I keep a half a cup back and only add it if the dough sticks to the sides of the bowl. 


Add 2 teaspoons salt.

Add 1/2 cup quick cooking oats.

Knead for 5 minutes.

Put in a warm place and let rise until doubled, at least an hour, I found it takes longer.

Shape into a long log.

Cut into 8 pieces.

Shape into log buns. I know you can do WAY better than I did! :) Let rise for another hour.
Mix 1 tsp cold water and an egg white. Brush the buns with this.

Sprinkle with quick cooking oats.
Bake at 375 for 20-25 minutes.

Let cool on a wire rack.

Make a really yummy sandwich with your favorite fixings.

Costco Deals

Don't you wish someone would go into Costco and take a picture of the deals and post them? Me too. Here's what I found tonight. The sales usually end Sunday, but as you can see by the sales tags some things go longer. This is for Costco west.
Chickens have a $2 off coupon. Remember, smaller is a better deal. I dug and found
the smallest one was $26.14. After the $2 off it works out to $2.26/lb or $4.98/kg.

Chipits are $10.99 for the 2.4kg($4.58/kg)
